It is delicious in a chicken risotto or served cold as a salad with shrimp and bell peppers.
Having seen the source of this rice in Camargue and having met with the Benoit family, I can assure you that this rice grows with a lot of care and with respect for its environment. This is the only place in France where rice grows and where you can see wild flamingos at the same time! It is a very special place, the home of a very special rice.
